My Favourite Slimming World Recipes 

There is nothing like the absolute fear of putting on a bikini to motivate you in to getting in to shape 💪🏼

I have 9 weeks to get back down to my goal weight, so it has been back to healthy eating since landing back on Northern Ireland soil after my Portugal trip (excluding an Easter Egg or two).

Ive done it before so I can do it again! Can’t I? 😳

So, to keep me on track I’ve been preparing and planning my meals. Here are some of my favourite Slimming World Recipes that I’ve made this week. 👌🏻

Sticky Five Spice Gammon



What you’ll need:

  • FRYlite
  • 2tsp Chinese Five Spice Powder
  • 4 Gammon Steaks
  • 2tsp Chilli Flakes
  • Juice of 1 Orange
  • 1 tbsp Clear Honey
  • 100ml Chicken Stock
  • 2 tbsp Soy Sauce

Method

  1. Spray a non stick pan with fry life
  2. Cut your gammon in to chunks and put into pan over high heat
  3. Sprinkle Chinese 5 spice over gammon
  4. Once cooked, add chilli flakes, Orange juice, honey, stock and soy sauce
  5. Stir well and simmer for 5 minutes until gammon is sticky
  6. Serve with what you like, I love this with noodles

Serves 4, 1 syn per serving

Cheesy Taco Pasta Bake


What you’ll need:

  • Lean mince beef
  • 1 tbsp Chilli Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Mixed Herbs
  • 1/2 tsp Paprika
  • 1 1/2 tsp Cumin
  • 500ml Beef Stock
  • 1 Tin Chopped Tomatoes
  • 1 Carton Passata
  • 1 Pepper
  • 400g Pasta
  • 30g Grated Cheddar

Method

  1. Brown the mince on a medium heat pan sprayed with frylite
  2. Add everything else except cheese
  3. Bring to the boil then reduce heat, cover and simmer while you cook pasta
  4. Add cooked pasta to pan and stir
  5. Remove from heat
  6. Add cheese and serve

Serves 4, syn free when using cheese as Healthy Extra or 1.5syns.

Super Easy Chicken Curry



What you’ll need:

  • 2 large onions
  • 600ml of Chicken Stock
  • 3cm piece of Root Ginger
  • 3 Garlic Cloves
  • 2 tbsp Curry Powder
  • Packet of Stir Fry Chicken (to serve 4)
  • 275g fat free yoghurt at room temp

Method:

  1. Put onions and 425ml stock in a large saucepan
  2. Cover, bring to the boil over a high heat and cook for 10 minutes
  3. Reduce heat to low, take off the lid and simmer for 20 minutes
  4. Add ginger, garlic and curry powder to the pan
  5. Add chicken and rest of stock
  6. Turn heat to medium, cover and cook for 20 minutes
  7. Take the pan off heat and add yoghurt a little at a time

Serve with your favourite rice, serves 4 and is syn free.

Chicken Box



What you’ll need:

  • FryLite
  • Chicken
  • Peppers
  • Ready to Mix Coleslaw
  • Potatoes (Made in to chips)
  • FOR THE SAUCE
  • 3 tbsp extra light mayo
  • 5 tbsp fat free natural yoghurt
  • 2 tbsp tomato puree
  • 1 tbsp mustard powder
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1/2 tsp paprika

Method:

  1. Peel potato, cut in to chips, spray with fry life, cook in over on a mesh tray on 200 for 40 minutes
  2. Cook chicken and peppers in a pan over medium heat
  3. While these are cooking, add all sauce ingredients and mix well
  4. Take ready mix coleslaw bag and mix with some fat free yoghurt and 1tbsp onion granules
  5. Once everything is cooked, serve in this order, Chips, Chicken and Peppers, Sauce, Coleslaw

Serves 4 and 1 syn per serving
